Diseases that Can Be Transmitted Through Food Handling


In accordance with its obligations under the ADA, HHS' Public Health Service (''PHS'') published an interim list of communicable diseases that may be transmitted through the handling of food. The list was formulated after consultation with the Food and Drug Administration, the National Institutes of Health, state and local health officers, and national public health organizations. AIDS and the HIV virus were not included on the list, signifying that the PHS currently does not consider AIDS to be communicable through food handling. The PHS, however, did find that the following six pathogens frequently are transmitted through food handling by infected persons: (1) Hepatitis A virus; (2) Norwalk and Norwalk-like viruses; (3) Salmonella typhi; (4) Shigella species; (5) Staphylococcus aurous; (6) Streptococcus pyogens.
